• 1 egg
• 310 can corn kernels, rinsed and drained.
• 1/2 small red onion sliced thinly
• 1/2 cup wholemeal self raising flour
• 1/3 cup skim milk
• Cooking oil spray
• 1/3 cup low fat cottage cheese
• Chopped parsley
Whisk egg in medium bowl. Stir in corn, onion , flour and milk.
Spray large fry pan with cooking oil. Portion a small amount of mixture into serving sizes as putting in fry pan. Cook about 2 mins or until bubbles appear. Turn fritters and cook until lightly browned on the other side.
Serve warm fritters with cottage cheese, sprinkle with chopped parsley
This is a light, delicious recipe that is easy to prepare. Cook more than required and can be served cold in lunch boxes, or as an afternoon snack.
