This recipe is a new one that is great for the 7 DAYS of ME and is also the perfect addition to the Bestow Roasted Tandoori Cauliflower dish if you want more of a meal with a warm element. If you are combining the two then skip the tamari dressing on this recipe and use the creamy coconut dressing on the cauliflower recipe for both dishes.


Tamari dressing
2 tablespoons of tahini
1 tablespoons sesame oil
1 tablespoon of olive oil
1 tablespoon of tamari
1 clove of garlic, minced
1 teaspoons of fresh ginger, minced
Salt and pepper to taste

Roasted chickpeas
1 tin of chickpeas, drained
1 cup of coconut thread
1 tablespoon of tamari
2 tablespoons of sesame oil
1/4 teaspoon of smoked paprika

1 cup of brown rice, cooked and cooled
1 cup of baby spinach leaves or rocket
1 beetroot, spiralised or grated
2 carrots spiralised or grated
1/4 head purple cabbage shredded
1 small handful of basil leaves, torn
1 ripe avocado, sliced
2 spring onions, finely sliced
1 cup of black beans, drained (optional)
Pumpkin seeds and sesame seeds for topping

Preheat the oven to 200 degrees celsius.

For the chickpeas mix the tamari, sesame oil and smoked paprika together. Spread the chickpeas out on a baking tray lined with baking paper and pat with a paper towel to absorb as much moisture as possible. Add the coconut and toss with the tamari mixture to evenly coat. Roast for 30 to 40 minutes, stirring halfway through, until golden brown. Remove from the oven and cool. Any leftovers will keep well in a sealed jar for up to a week.

For the tamari dressing, shake all the ingredients together in a lidded jar. Any leftovers will keep in the fridge in a sealed jar for up to a week.

For the salad add the brown rice to a large serving dish, add the black beans if you are using them then add all the vegetable ingredients, top with the seeds, basil and roasted chickpeas. Serve with the tamari dressing.

This recipe is perfect for increasing your intake of fresh, salad vegetables in a tasty way. The blend of black beans, chickpeas and brown rice provide you with a complete protein but you can boost it by adding chicken or fish if you wish. This is a wonderful Vital Cleanse lunch option!

• For me, this cleanse was about changing habits and going back to the way we ate when I was growing up in the 70’s & 80’s. It was real food – nothing was processed, everything was fresh.
• My skin looked noticeably clearer and brighter during the cleanse. One of the my clients even asked me if I had been on holiday!
• I normally take natural meds for pre-menopausal hot flushes, but during the cleanse week I didn’t need to take them once. That is telling me something.

Lemons are an excellent fruit source of the mineral phosphorus, required daily for repair and healthy functioning of the nervous system. Phosphorus foods rebuild and repair the brain, improve memory and promote creativity.

Lemons are one of the best fruit sources of the mineral sodium, which aids the proper elimination of waste, cleanses the lymphatic system and helps prevent arthritis and the hardening of arteries. Freshly squeezed lemon juice taken daily will protect and promote a clean and healthy digestive system.

Lemons are a rich source of Vitamin C, and therefore help maintain healthy skin. Vitamin C also plays a major role in the formation of collagen, helping to ward off those fine lines and wrinkles. It’s also an important antioxidant, capable of protecting cells from the damage caused by free radicals.

Topically, lemons act as a natural antiseptic and the juice can be used to ‘dab’ on any pimple activity. Skin likes to be slightly acidic and the bacteria associated with acne struggle to survive in an acid environment.

As part of our 7 DAYS of ME Cleanse lemon takes centre stage! We start each day with lemon water, have a great lemon based vinaigrette for some of our salads and poach our chicken in lemon and herbs (see recipe below).




3 single chicken breast fillets
1 lemon sliced
Thyme sprigs
Italian parsley
Water to cover
Himalayan or sea salt and pepper to season

Place your chicken fillets in a saucepan add the lemon, herbs, salt and pepper and just cover with water.

Simmer for 10 minutes then remove from the heat and then let it stand for another 10 minutes. Drain the chicken allow it to cool and then slice or shred for adding to salads.

2404171What are you hoping to get out of the cleanse?   How do you want to look/feel?   What do you think will be a challenge?

I knew that I had been overeating and overindulging in things that weren’t so good for me, I had made some really bad habits that were leaving me feeling less than great about myself.  I had been putting on weight and feeling blahhhhh.  So I was hoping it would help me break a few habits – leave the wine and cheese for the weekends not each day, and make my portion sizes a little healthier.  I thought not having eggs for brekky each day may be hard and that wee bit of toast and marmalade but it didn’t prove to be too hard at all.

DAY FOUR:  How are you feeling so far?    What has been challenging?   What have you enjoyed?   What differences have you noticed so far?  How are you going with giving up coffee and sugar?

Day 3 and 4 were by far the most challenging for me – I was full each day but feeling a little unsatisfied, I couldn’t quite put my finger on what I thought I was craving.  Luckily I only drink coffee on occasion and have minimal processed sugar in my daily diet so there was no major hardship with not having these in my week.  I had the most awful headache from day 2 to day 5 so I must have been getting rid of some really good toxins.  Even though I had a headache I still felt good within myself – I noticed my energy levels were improving and I wasn’t having a mid afternoon crash.


END OF CLEANSE:  How would you describe your experience in a nut-shell? 

It was awesome so what I needed to do, I feel so much more in control of my daily diet almost like I pushed the reset button.  The food was really yummy and plenty of it.  Some of the recipes will be staying in our daily diet.  I am proud of myself for taking care of myself – something as a therapist we often don’t do.

How do you look/feel after your cleanse?   What has been the biggest positive change?  

I feel lighter – I think I am I never weigh myself but my belly certainly looks slimmer – this is a positive for me.  Probably the change I will take forward is no nibbles before dinner and earlier dinners and better portion control and food choices – that’s lots of positive changes – amazing giving that it was only 7 days.

Which recipe did you really enjoy? 

I love them all but probably my all-time favorite is the salmon and avocado salsa.  We have it quite often for dinner.  I also really loved the fresh crunchy salads for lunch – this is something I have continued with and the hummus dressing – delicious.


What advice would you give to other people embarking on the cleanse?

Take it one day at a time and plan something special for yourself during it especially on day 3 or 4, even if it is as simple as 15 mins meditation or a candle light bath.  Also we made each meal special setting the table nicely and having music on. 

Are there any aspects of the cleanse you will continue into your everyday habits?

Yes no toast and jam at breakfast, no cheese, crackers and wine before dinner during the week – I will save this for the weekends or special occasions.  And I am trying to be more prepared for my week with a good supply of healthy foods.

Anything else?

Just do it….. it was a scary thought taking things out of my diet but so worthwhile, I feel so much more in control of my daily diet.

How Will I Feel During the Cleanse?

The Vital Cleanse promotes energy by providing our bodies with nutrient-rich foods and removing all the crutches (coffee, alcohol, refined sugar and refined carbohydrates) that give us an initial burst of energy and then drop us down again. All around us we can see signs that Spring is nearly here. From soft pink blossoms and fresh green leaves to the bright yellow daffodils blooming in gardens, nature is awakening. Each day the sun casts a glow of red, orange and gold across the sky as it rises and sets and graces us with more and more light filled hours to enjoy. The sea appears a deeper blue, mirrored by the clear sky.

As nature awakens, so should we. Spring is the perfect time to revitalise those healthy habits that may have lain dormant over winter. To reintroduce fresh and seasonal produce to create simple and healthy meals that will renergise and awaken your body, mind and soul. Take a hint from nature and begin again to bring colour into your life. Include plenty of raw, colourful vegetables to support your skin and give it the nourishment it needs.

Below is one of our favourite meals which encourages eating a variety of raw, coloured vegetables. The heroes of this salad are the carrot, beetroot, cucumber and rocket. See below for reasons why we love these vegetables and consider them ‘superfoods’ in their own right.


Carrot – contains high levels of beta-carotene (converted to Vitamin A in the body) which promotes healthy skin cell turnover and is essential for repair and maintenance of the skin, immunity and regulating sebaceous glands.
Beetroot – high in vitamin c, a nutrient which plays an important role in regulating collagen production and helps with healing

Cucumber – a good source of silica which can increase skin elasticity and boost collagen production

Rocket – high in anti-oxidants which defend against free radicals that cause wrinkles and premature-ageing as well as sulphur needed for skin structure and strength

These amazing ‘superfoods’ combined with healthy fats, protein and carbohydrates from the egg, tuna, brown rice and seeds make for a well balanced, tasty and nutritional meal, perfect for Spring!

Serves two
½ cup of brown rice, cooked
1 small can of tuna (185g)
½ carrot, grated
½ a medium sized beetroot, grated
Juice and zest of half a lemon
1 boiled egg, quartered
½ of a telegraph cucumber, chopped
1 tablespoon of sunflower seeds
A handful of rocket
A small bunch of micro greens (optional)

Himalayan or sea salt and pepper

Mix the tuna, carrot and beetroot together with the juice and zest of half a lemon. Place your cooled rice in the bottom of your serving bowl. Top with your tuna mixture, quartered egg, cucumber, sunflower seeds, rocket and
micro greens.
Drizzle over the Bestow lemon dressing (recipe below) and season to taste.




Juice of one lemon
1 tablespoon of Bestow Beauty Oil
2 tablespoons of olive oil
1 teaspoon of Dijon mustard
Himalayan or sea salt and pepper to season

To make the dressing, shake all the ingredients together in a jar. Add seasoning to taste.

Legacy, Vision and What Really Matters

After 40 years at the helm of Janece Skincare, founder, Janice Sarre Smith, is entrusting the business side of the company to her daughter Kristen Jelk. But if you think she intends to fade into retirement, think again. Jan is as passionate as ever about bringing people and plants together and her creativity is flowing thanks to the freedom she now has to spend more time with her hands in the soil.

Kathryn Overall chats with Jan and Kristen and discovers that while Kristen is working to preserve her mother’s legacy, Jan herself is still far too full of vision to be looking back.

Having reached the grand age of 84 years old, you could understand if Janice Sarre Smith, legendary herbalist, naturopath and founder of Janesce, wanted to retire and put her feet up.

There’s no denying she’s earned the right. It’s not just that she helped to pioneer a holistic skincare movement, or that she developed the powerful botanical Janesce skincare range, or even that she grew Janesce into a widely-loved company from grass-roots beginnings on her Claret Ash farm in the Adelaide Hills. What speaks the loudest is that at the heart of her accomplishments is a woman who loves people and who believes that nature holds the key to a thriving life.

Jan has cared for countless thousands of people whose skin disorders have been healed as they have embraced her Janesce products and wellness-from-within philosophy. It’s a beautiful legacy, by anyone’s standards.

But anyone who knows this remarkable woman will tell you that it is vision for the future, not notions of legacy that fuels the fire in Jan’s blood. “I am, at last, getting the time to be even more creative,” says Jan. “The team and I are growing healthy plants and creating new products that are very much needed in the world at this time.”

Plants are not just raw biological material to Jan. Nature, in her world, is always spelt with a capital N – carrying with it a sense of urgency, perhaps even redemption. “I know that Nature, as the ultimate healer for body, mind and soul still has a lot more to offer the world,” she says. “I always believe that Nature imparts its knowledge at the time we most need it.”

It is this sense of mindful urgency, which compels Jan to work towards her expansive vision of human flourishing for all. It’s a vision that is rooted in both science and spirituality. “I want to remind people to embrace the needs of all people – regardless of race, faith and ideologies,” she says. “When people look to Nature for their nourishment – physically, mentally and at a soul level – it brings a new way of being into the world. It is available to everyone. “

Jan’s determination to focus on the grass roots of Janesce means she spends most of her time managing the garden and the laboratory. These days, you will often find her younger daughter, Jo-Anne Sarre, working along side her, making the plant extracts, which the Janesce skincare range is based on.

Jan says she welcomes this opportunity to pass on the essential elements of her vocation to family members. Jan herself brings together a deep understanding of the structure and function of the skin with a reverent love for the plant kingdom. She brings both the learned knowledge of a biochemist and the intuitive wisdom of a devotee of Nature to her work. It’s a powerful alchemy and Jan is grateful that Jo-Anne has the disposition to embrace the herbalist’s art. “She has a strong affinity with the plant kingdom and treats plants with respect and love,” says Jan. “She feels their energy and reveres that. Her love and energy is in the extracts, along with mine”.

Jan’s eldest daughter, Kristen Jelk, has been involved in Janesce on a full-time basis for the last 12 years. With a background in fine arts and design she says she has always veered towards the design and creative side of the business. “The company stores have been part of that,” says Kristen. “I have enjoyed telling the Janesce story through bricks and mortar outlets”.

In this time of transition, Kristen is now taking over the business management of Janesce. While Jan works her magic at Claret Ash Farm, Kristen oversees the business operation that distributes her mother’s passion, philosophy and products to women all around the world. “Kristen has total honesty, integrity and purpose and I am so proud of her,” says Jan.

Kristen absorbed her mother’s nutritional and holistic philosophies right from childhood. “Each morning we would have a lemon and honey drink sitting on the bench in the kitchen waiting for us – plus any vitamin supplements we may have needed at the time,” says Kristen. “The foundations of her work were always around us.”

Kristen is determined that her mother’s pioneering work will be carried forward to the future without any dilution of the values that have set Janesce apart. “Jan has not wavered from her work on skin health through nutrition,” she says. “While beauty industry trends came and went, she remained true to her core beliefs.”

Jan says she feels grateful to have her daughters carry forward the Janesce vision. “It is such a blessing that they are not only interested, but that they have the same values as I do,” she says.

Part of Kristen’s role involves ensuring that the business model, which supports the Janesce skincare range, is sustainable for the future. Preserving her mother’s legacy means she sometimes has to make hard calls, such as the recent price increase across the Janesce range.

Kristen says the cost of some raw materials used in Janesce products have tripled in price due to the boom in the natural skin care industry. In addition, Jan always allows for a very high percentage of plant extracts in each product. “This is very unusual in our industry,” says Kristen. “We maintain this standard because it gives the client the full benefit with great results.”

She adds, “We have put off this price adjustment for a long time but it is now imperative to ensure that the time honoured process of making Janesce products is maintained into the future.”

When you ask Jan about her vision for the future of the beauty industry, she talks abut the seeds she is planting. “While the big companies bombard people with so many impossible promises, I sincerely hope the seeds I have planted will become aromatic, wonderful healing blooms,” she says.

It’s a fitting reminder from the founder of Janesce who taught us that we achieve the flourishing of tomorrow by sowing seeds today. For Jan, everything in the end comes back to the soil. Her faith is in the seeds she holds in her hand – calendular, rose, lavendar, geranium – the infants of the plant kingdom, pulsing with promise. That is where her hope for us lies.

Picture1Having worked with skin all my life I am aware that when we enter the fourth decade of our life, the adjustments in hormones can have a definite effect on our skin. This can intensify as we approach menopause.

When I reached my 50’s I asked Jan Smith of Janesce if she would make a concentrate for women like me to support our skin during these transitional years.

I specifically asked for a concentrate because, being made directly from the beautiful tinctures Jan extracts from her plants, I believe they are the most powerful and penetrating of all her products. I think the new serum is quite delicious.  The ingredients give it quite an uplifting fragrance but there is a softness or femininity to it.  It seems to have the supportive qualities of the revitalising concentrate, but with a cooling and hydrating effect.  I would need to use it a bit longer to notice any definitive changes to the skin, but I certainly felt it didn’t compromise anything. I have enjoyed using it.

I have one of those evil 7 x magnification mirrors in my bathroom and everything I put on my skin gets observed through it. The Cleanse Begins | Hopes & Dreams

I feel that my energy levels aren’t where they should be and often I’m dragging myself out of bed in the morning. I’m really hoping that a cleaner way of eating and kicking my coffee habit will have me leaping out of bed each day!

I have the hormonal disorder Poly-cystic Ovaries Syndrome and find I can get a lot of congestion around my chin and jaw area during my menstrual cycle. I’d love to eliminate the processed food and refined sugar symptoms which I’m sure are contributing to this condition.

Despite having a chef husband, I am often feel really uninspired about cooking. So I hope 7 DAYS OF ME gives me a little more motivation in the kitchen department. I can see at a glance that there are some very delicious looking dishes in the book!

My biggest challenge this week is definitely going to be organisation, especially with having a two year old at home. But the supermarket shop is completed (thanks to the handy shopping list in the book) so I’m feeling prepared! I’m pleasantly surprised at how many ingredients I actually already have in my pantry at home.

I’ve committed to giving up coffee before beginning my cleanse, which has given me headaches now but will hopefully make my experience easier during the next week. As a former barista, giving up coffee seemed impossible but alas life has gone on!



Middle of the Road | The Challenge

So far, the 7 DAYS OF ME cleanse has not been as hard as I expected. Day Two and Three were the worst. During this time I was feeling really really tired but luckily it was the weekend so I was able to sneak in a few power naps.

At this point I’m very thankful that I gave up coffee before beginning, as I think my symptoms would have been worse. I have had to cut the Aperitif down to once a day as I found I was running to the bathroom quite regularly.

Day Four, the ‘brain fog’ is beginning to lift and I’m surprised at how little I miss coffee and sugar! My mind feels clearer, sharper and my energy levels are being sustained further into the afternoon. I can confidently say the the urge for a sugar or caffeine fix is disappearing.


End of the Cleanse | The Happy Ending

This is seriously the BEST thing I have done for myself in a very long time. My mind is clear, my energy is so much better and I just generally feel better in myself. I also have to mention the 2kg weight loss and the disappearance of my bloated tummy.

The whole experience was actually much easier than I initially expected and gave me some really practical and useful tools to carry over into my everyday life. I’m especially thankful all of the new quick, healthy lunch and dinner ideas.

I actually felt less hunger this past week than I would normally. I guess this is because I was eating regular meals with good quality protein to sustain my blood sugar levels. The food was absolutely delicious and surprisingly I didn’t feel like I was being deprived. My favourite recipes have to be the Tofu Stack for Two and the Falafel Goodness Bowl. Yum!

My advice to others thinking about embarking on the 7 DAYS OF ME journey would be to just go for it! What goes into your body feeds your skin, body and soul. You deserve to spend time caring for yourself and no one else is going to do it for you. I’d totally advise giving up any vices such as coffee, sugar and alcohol in advance to lessen the shock on your body!

I thought I had a reasonably healthy diet before I started the 7 DAYS OF ME cleanse. But this week has made me realise how much junk and sugar was actually creeping its way in! This week of clean eating is only the beginning of my story and I can’t wait to share it with my clients!

The Cleanse Begins | Hopes and Dreams

I am a firm believer that beauty comes from the inside – there is only so much a great skin care brand can achieve without help from the inside. I am not only hoping for improved skin tone but also less bloating, more energy and, hopefully, a little weight loss.

Drinking a few morning coffees is the habit I am most wanting to break. I’m doing the cleanse with my husband whilst we’re on holiday for a week, enjoying the summer sun close to the beach.

I found the shopping guide incredibly helpful when I went to the supermarket. The book states that you may find the initial cost of purchasing the ingredients expensive – just under $200 for me, but once you have them you need nothing else for a whole 7 days.



Middle of the Road | The Challenge

I feel like crap! I’m definitely struggling with aches and pains, I feel like I have a bad flu, I also have a continual headache, plus I’m finding I will all of a sudden break out in a hot sweat. The book says this discomfort should end by day 5, so fingers crossed!

I can honestly say I haven’t missed coffee so far this week. I have replaced it with a ginger and lemon tea most mornings. Also, my husband and I brought a juicer about a year ago and have thrashed it this week with freshly made carrot, beetroot and apple juice.

I’m not having any issues with feeling hungry whilst doing this cleanse, which is awesome. I have noticed that when I eat the Overnight Oats for breakfast, the addition of the dates and seeds keep me full longer than what porridge on its own usually does.


End of the Cleanse | The Happy Ending

To be honest my overall experience was tough. Not hungry tough, just the feeling of being unwell for the first five days. But it was all worth it because I feel amazing, totally energetic and the headache finally went. I have also lost 2kg!

It’s hard to pick one favourite recipe because I really enjoyed them all. But if I had to it would be the Tuna and Sweet Broccoli Salad. The Overnight Oats totally took me by surprise. On day 1 I found them a little bland due to the lack of sugar I would normally sprinkle on top. However, by day 5 I really enjoyed this recipe and found them to be quite delicious.

The best advice I can give to those embarking on the 7 DAYS OF ME journey would be to plan ahead as the books suggests. The shopping list is fantastic and takes out all of the hard work of planning. It means when you’re feeling unwell you don’t have to think about facing the supermarket!

It’s scary to think that healthy eating can make you feel as awful as I felt those first 5 days. It obviously shows how much toxicity needed to be expelled from my body! It has certainly made me think more about the impact of food and my general health and well being.
