Ingredients:

• Bunch basil washed, and stems removed.
• 150 gr of pine nuts
• 2-4 garlic cloves
• 20 -30 ml of cold pressed safflower oil.
• Salt and pepper

Method:

In a mortar and pestle put the peeled and roughly chopped garlic and grind with a generous pinch of salt. Add the pine nuts ( un toasted makes them creamier ) grind for 2 3 minutes and then add the basil leaves. Work until leaves are broken into the mixture and add oil until mixed to a paste. Add only the amount of oil to achieve the desired consistency. Add further seasoning to taste.
( this can be done with a food processor, it is just a matter of preference )
Store in an airtight glass jar, in the fridge and use within 2 weeks.

This creamy aromatic blend of fresh herbs, nuts, garlic and oil can be interpreted with so many different ingredients. Here we have a classic recipe of basil, pine nuts and we have replaced the olive oil, with cold pressed safflower oil that brings many benefits to skin and health.
Experiment with ingredients such as coriander, parsley, artichoke hearts, walnuts, almonds, and cashews.
Makes a great pre dinner snack served with dry toasted thin Lebanese bread, or tortilla chips.
