Ingredients:

• 1 cup apricots, finely chopped,
• 1 cup raisins or dates, finely chopped,
• 1 tablespoon Honey,
• 250g Tofu or Ricotta Cheese,
• 1 cup coconut

Method:

Simply mix ingredients together and form into small balls about the size of a walnut. Roll in additional coconut and serve.

Extra Info:

They make a delicious sweet at the end of the meal and also make a great snack or lunch box delights.

You can add any of your favorite dried fruits to the ricotta based mixture to add a little element of surprise with each batch that you make. Warning – They are very addictive.
Keep them in the fridge for 1 week (if you can) or freeze them. (They take 1 hour to thaw) Blissballs are high in fibre, energy packed little morsels of nutrition!
