• 6 Ripe figs
• 250 ml firm ricotta
• tablespoon good vanilla yoghurt
• Vanilla extract
• Good honey
• Toasted almond flakes
Put figs in a baking dish which has been lightly buttered, and into a preheated moderate oven for 15 – 20 mins or until soft.
In the meantime combine in a bowl the ricotta, yoghurt, vanilla extract, tablespoon honey. Beat until smooth.
Once the figs are cooked, split in 2 and serve on top of ricotta mixture.
Drizzle with a little more honey and sprinkle with almond flakes.
As with any simple recipe, the hero is the ingredients and so they need to be great quality for this dish to work. Choose well and enjoy.
