Banana Date Muffins


• 2 cups Oat Bran
• 1 cup wholemeal S.R. Flour
• 2 cups chopped dates
• 2 large mashed bananas
• 2 tablespoons sesame seeds
• 1/2 cup raw sugar
• 1/2 cup molasses
• 1 cup So Good (soy milk)
• 1 teaspoon carb soda.


Put bran, flour and dates in bowl, put milk, sugar and molasses into saucepan and heat gently stirring until sugar dissolves then add carb soda and mix well. Add to dry ingredients and mix thoroughly then add mashed banana and seeds and mix well. Grease well, patty cake tins or muffins tins, placing a dessertspoon of mixture in each. Bake at 375F (electric) for 15 minutes. Leave in tins to cool slightly. Makes 3 dozen.

Instead of 2 cups dates – add 1 cup dates, 1 cup raisins, mashed banana 3-4 medium, apples grated, 1 teaspoon cinnamon.
