Pumkin and Carrot Soup


• 500g pumpkin
• 250g carrot
• 1 onion chopped
• 5 cups chicken stock
• 2 tablespoons mint
• 1/4 teaspoon pepper
• 1/4 teaspoon nutmeg


1. saute onion until golden,
2. add stock, veggies and spices,
3. Simmer until tender and puree them,
4. Heat puree until boiling,
5. Add 1 cup milk and reheat before serving.
