Rice Pudding


• 250 gr of long or medium grain rice
• 2 litres of milk
• 3 tablespoons sugar
• tsp vanilla essence
• ground cinnamon to serve.


Put the rice into a heavy based saucepan, and cover generously with water and bring to the boil. Boil for 20 mins , then thoroughly drain the rice. Rinse out the pan and pour in the milk and vanilla. When it comes to a rolling boil, add the rice and bring it back to the boil. Lower the heat and simmer for 20 mins, stirring often with a wooden spoon to make sure it doesn´t stick. Stir in the sugar and simmer for 10 minutes before removing from the heat. Leave to cool for about 10 mins in the pan, then spoon out into serving bowl. Sprinkle with cinnamon and serve or put in the fridge for few hours.

This one is a classic and so easy to make. Very satisfying as a winter desert when warm or as a summer pudding when cold.
