• 1 slice toasted sour dough or whole grain bread per person
• 1 x 1 cm slices of smoked turkey breast roll ( cut from whole breast roll )
• 1 x soft poached egg
• slices of sweet tomato
• Salt and pepper to taste
Bring a non stick fry pan to moderate hot, and wipe or spray with oil.
Fry turkey breast slice until brown on both sides.
To serve, place turkey breast slice on toast and top with tomato – season , then top with soft poached egg and lightly season again.
Smoked turkey breast is very low in fat, and has an intense flavour once heated through in a fry pan. A great alternative to bacon that is a very rich meat.
