Chicken Breasts in Filo Pastry


• 3 whole chicken breasts OR 6 chicken fillets
• 2 cups grated apple
• 1/2 cup roughly chopped walnuts or almonds (found walnuts was nicer!)
• 1/2 natural yoghurt
• 2 tablespoons date & apple chutney
• 1/2 cup sultanas
• Freshly ground pepper (optional)
• 200g packet filo pastry
• Extra yoghurt


Remove the skin & bones from the chicken breasts if necessary. Place the chicken between sheets of plastic on a wooden board. Roll out with a wooden rolling pin or beat out with a wooden meat mallet until fairly thin.

Combine apples, walnuts, yoghurt, chutney, sultanas & black pepper. Spread this fruit mixture over flattened chicken fillets and fold up into a neat parcel.

Brush 2 sheets of filo pastry with the extra yoghurt. Fold in half & brush once more. Place the rolled pieces of chicken on the end of the pastry sheet nearest to you. Fold the sides of the pastry sheet up over the chicken to form a parcel. Continue with remaining chicken and filo.

Place chicken parcels on a baking tray with seam side down & bake in a hot oven until pastry is golden brown & chicken is tender (approx 30 minutes).

SERVES 4 – 6
