Chicken and Mango Salad


• 1/3 cup soy sauce
• 1 tablespoons olive oil
• juice from 1 lemon
• 4 chicken breast fillets
• 1/4 cup mayonnaise
• 1/4 cup yoghurt
• juice from 2 limes
• 2 tablespoons mango chutney
• 1 tablespoon mild curry paste
• 4 large ripe firm mangoes
• salad greens


1. Place soy, oil and juice in a large pan, add the chicken breasts right-side down and cook over medium heat for 6 minutes. Turn and cook other side for 6 minutes further or until meat is cooked through. Set aside.
2. Place mayonnaise, yoghurt ,juice, mango chutney and curry paste into a small bowl and whisk with a fork to combine. Cut cheeks from mangoes, then cut mango flesh into diamonds. Turn the skin inside out and slice or scoop the mango flesh from the skin.
3. Slice each chicken breast into 4 or 5 pieces. Place each breast on some salad greens. Place mango pieces on the side and top with dressing.


Extra Info:

We cooked the chicken in a mixture of soy sauce and lemon juice, which teams well with the mango and curry mayo. Or you can use a roasted or barbecued chicken. Just cut the meat into pieces.
